Barley Bread

Barley played an important role in the ancient Greek culture as a staple bread-making grain. It was an important food for athletes, who attributed much of their strength to their barley-rich training diets. Barley’s claim to nutritional fame is based on it being a very good source of fibre and selenium, as well as, a good source of phosphorus, copper and manganese.
